Chocolate Covered Bananas

When it comes to chocolate in my family Cosmo Kramer has it right: "Oh you may stray, but you'll always return to your dark master, the cocoa bean." Whether it is a simple Chocolate Chip or a decadent Chocolate Mousse Torte, if my guard is not up, I will succumb....So when this week went especially crazy, I decided when life goes bananas its time to feed the monkeys and what better way than Chocolate Covered Bananas!



1-Put a popsicle stick into a banana that has been cut in half. Then freeze.
*Note:  Do not put in a plastic bag.  This will lock in the moisture as they freeze and create ice crystals which will seize the chocolate as you dip the bananas. Also, to keep from sticking, place bananas on wax paper.




2-Melt a bag of chocolate chips with 2 tablespoons of vegetable shortening in a double boiler.











3-Dip the frozen bananas in the melted chocolate.











4-Set on wax paper and they are ready to eat.  Unless you are like me and you HAVE to drizzle white chocolate on them.
