Quinoa Taboule

Ingredients:
2 Cups cooked Quinoa
1 Cups chopped Parsley
1/2 Cup chopped Scallions
2 Tbsp. fresh Mint
1 Garlic Clove
1 Tbsp. minced fresh Basil
1/2 Cup fresh Lemon Juice
1/4 Cup Olive Oil
1/4 tsp. Salt
1/8 tsp. ground White Pepper



It takes 1/2 Cup of Quinoa to 1 Cup of water to cook. Bring water to a boil and then add Quinoa and bring to a boil, cover and cook over medium heat for about 15 minutes, or until all the water is gone. Let stand while you prepare the other ingredients. This makes 2 Cups.
Toss everything together and chill for an hour.



The flavor can be a little intense, so I think next time I will use four cups of cooked Quinoa (2 Cups water, 1 Cup Quinoa) next time I make it. But it was yummy--and Healthy!
